A traditional dish made by kneading bulgur and fatty lamb mince with tomato paste and spices, shaped into walnut-sized pieces, and steamed on a sieve called 'süzek' in the region.
All ingredients are kneaded without adding water. Walnut-sized meatballs are made and flattened. They are steamed for 35–40 minutes in a sieve over boiling water. Served hot.
